This Italian classic soup is filled with vegetables, beans, and pasta or rice, slowly cooked in a tomato-based broth. This is a simple slow cooker meal that never fails to satisfy even the most hungry of appetites!

Ingredients in Minestrone Soup

Vegetables – Homemade Mensatron is all about the vegetables! I use onions, carrots, celery, tomatoes and spinach. You can add in green beans, zucchini, or bananas. If time is short, just toss in a bag of frozen mixed vegetables!

Beans – Fiber-rich beans such as red kidney beans, garbanzo beans, cannellini beans, or any combination can be used. This recipe uses canned beans, drain and wash them before using.

Broth – For a pure vegetarian soup, substitute chicken broth for vegetable broth. Rotel tomatoes (tomatoes with green peppers and seasonings) can be used instead of canned tomatoes for a slightly spicy kick.

pasta – Small pasta shapes fit perfectly with beans and vegetables. Try ditalini, shells, small elbow macaroni, or orzo.

Variations – Make it sweeter and add cooked chicken, ground turkey, Italian sausage, or meatballs. For a thicker soup, blend one cup of the soup in step 3 and return it to the pot.

How to Make Minestrone Soup

  1. Cook carrot, celery and onion in oil until soft. Add garlic and spices.
  2. Add the rest of the ingredients (except the pasta and Parmesan) and cook until the carrots are tender. Stir in pasta and cook until pasta is done. Stir in spinach.
  3. Garnish with parmesan cheese and serve.

Storage Tips

  • Store leftover minestrone in a covered container for up to 4 days. Reheat on stove.
  • Freeze portions in a ziplock bag for up to 8 weeks. Melt in a saucepan over low heat until ready to serve. Add fresh pasta if desired.
  • If you're planning on eating leftovers, cook the pasta separately and add it to each bowl individually. This ensures that the pasta stays firm!
  • If cooking pasta separately, cook the pasta water in brine or broth for best flavor.

Minestrone Soup

This minestrone soup recipe is an easy one-pot meal filled with an incredible base of vegetables, pasta, and tomatoes. This is the perfect hearty meal for a cold day!

Cooking time 30 minutes

  • In a large Dutch oven, cook the oil, carrots, celery, and onion over medium heat, stirring, until the onion is soft, about 3-4 minutes.

  • Add the garlic, parsley, oregano, basil, salt and pepper and cook for 1 minute.

  • Add tomatoes, broth and beans. Cover, bring to a boil and simmer over medium heat for 10-12 minutes or until carrots are tender.

  • Add pasta, stir and cover. Let the soup simmer, covered, for 10 minutes or until the pasta is tender. Stir in spinach and let sit for 2 minutes.

  • Season with additional salt and pepper to taste. Garnish with parmesan cheese to serve.

Planned leftovers: If you're planning on eating leftovers, cook the pasta separately and add it to each bowl individually. If the pasta is placed in the soup, it will absorb the broth and thicken.

  • You can mix and match your vegetables however you like. Keep it meatless or add your favorite protein like cooked. Italian sausage.
  • This is a great soup to use up leftover vegetables or, if time is short, use mixed frozen vegetables.
  • Rinse canned beans in cold water to remove any preservatives and excess sodium.
