On Tuesday and Thursday, I cut myself some slack. With three kids, I juggle between basketball, chess, soccer, magic club, and a lot of homework. So I often turn to my support system for help with dinner: takeout.

One of our favorites is Indian, but when we order coffee mains, rice, and naan for the five of us, the bill comes to $100. While being too busy is a solid excuse for not cooking, the cost of breaking the habit is a good reason.

What should I do instead of spending my kids' college funds on takeout? I reach for my all-time favorite Costco find: Sukhi's Chicken Tikka Masala. I can throw together an equally delicious meal in less than 15 minutes using this $14.99 pack* of creamy, spicy curry made with shredded chicken.

*This is the retail price from a Costco location in Central Virginia in January 2024. When they're on sale for about $10, I stock them up and put them in the freezer.

What is Chicken Tikka Masala?

It is very likely that you will find chicken tikka masala on the menu of most Indian restaurants. Oven-roasted chicken pieces are loved in creamy, buttery, tomato-based curries for good reason. it is Delicious. A Pakistani restaurant in the UK is often credited with the creation of this popular dish, although its origins are still up for debate.

How do I turn sukhi curry into a meal for my family?

Sukhi's Chicken Tikka Masala from Costco comes with two pouches (36 ounces total) which is not enough to feed my family even when served with rice and naan. So here's what I do to spread it.

Place both pouches in a medium bowl. Add one (13.5-ounce) can of full-fat coconut milk and one (15.5-ounce) can of dry chickpeas. This is a great way to almost double the volume and increase the vegetable protein. Stir everything well, cover the pot with a lid, and simmer it on medium heat for about 10 minutes.

Sometimes I add a teaspoon of garam masala (you can use curry powder) and a pinch of crushed red pepper flakes for extra spice, but it's not necessary. The flavor is bold as it is and the addition of coconut milk and chickpeas won't make it any lighter. If you want it more salty, taste and season after it is completely heated.

Trader Joe's has frozen garlic naan that you can throw in the toaster and pre-made frozen rice that you can reheat in the microwave—two conveniences that I trust to whip up this meal quickly. .

In total, this meal cost about $20. It's a smart, money-saving strategy that I stick to and a reliable weeknight dinner that my whole family loves.
