What are the best potatoes for baking?

Russet potatoes or Idaho potatoes are great for baking because they are starchy and have a thick skin that crisps beautifully when lightly oiled and salted.

That being said, you can make any kind of potatoes. Thin-skinned potatoes (such as red-skinned potatoes or Yukon Gold) have a more buttery and less starchy/fluffy flesh texture than russets.

How to cook potatoes

A perfect baked potato is super easy to make with just 3 ingredients. The method given below ensures that the skin becomes crisp and glowing from within.

  1. Peel the potatoes. Under running water to remove any dirt. Using a fork, poke holes all over the potato.
  2. Rub the potato lightly for crisp skin. Olive Oil (or melted butter) and add a splash. Kosher salt to taste.
  3. Place the potatoes directly on the oven rack and bake for them. 40-50 minutes (More on cooking times below).

Cut potatoes open with a knife, top with butter, salt and sour cream or scallions if you like.

  • Avoid with a fork To prevent the potato from bursting as steam can collect inside the skin or potato. Pierce the skin of each potato about 5-6 times.
  • for a Crisp skindon't wrap the potatoes in foil and place them directly on the rack!
  • for a Soft skinWrap potatoes in aluminum foil before baking. The steam from cooking will prevent the skin from becoming crispy.
  • To check if the potato is cooked, insert a fork into the center and make sure it is soft all the way through.

How long to cook baked potatoes?

The best baked potato recipe is one that is kept simple. A high oven temperature is ideal; I bake the potatoes in the oven at 400°F for 45-55 minutes.

If you have other dishes cooking in the oven at the same time, you can add the potatoes to the oven. Cooking times may vary slightly based on the size of the potatoes and the temperature of the oven.

  • 350°F 60 to 75 minutes
  • 375°F 50 to 60 minutes
  • 400°F 45 to 55 minutes

How to make Baked Potatoes

Potatoes are baked in the oven until the skin is crisp, and the inside is soft, white and crisp. Top with bacon, sour cream, cheese or chives for the perfect side dish.

Cooking time 50 minutes

  • Preheat oven to 400°F.

  • Scrub the potatoes to remove any dirt or debris. Dry with paper towels.

  • Pierce each potato with a fork so that the skin is pierced about 5-6 times in each potato.

  • Rub the outside of each potato with olive oil and season with kosher salt.

  • Place the potatoes directly on the middle rack of your oven and bake for 45-55 minutes. (I put a small piece of foil on the bottom rack to catch any drips).

  • Serve hot with your favorite toppings.

Prick each potato 5-6 times with a fork to prevent the steam from bursting.
For a softer skin, wrap the potatoes in aluminum foil before going into the oven. It helps prevent the skin from getting crispy. I prefer rough skin so I Do not wrap them in foil!
If you're cooking the potatoes with something else that requires a different temperature, change the cooking times for the potatoes accordingly:

  • 350°F 60 to 75 minutes
  • 375°F 50 to 60 minutes
  • 400°F 40 to 50 minutes

Cooking times may vary based on the size of the potatoes, so test with a fork to make sure they are soft in the center.
