Broth – Beef broth or stock flavors are my first choice for this cauliflower soup recipe. It can be replaced with chicken or vegetable broth. Feel free to change the spices and add thyme or oregano while simmering.

Top the cauliflower soup with potatoes or sweet potatoes, white onions or chopped Brussels sprouts. You can also add cooked Italian sausage, ground turkey or ham bone to the soup for extra flavor.

  • In a large pot, cook the onion in the olive oil for 3-4 minutes.

  • While the onion is cooking, cut the cabbage into ½-inch pieces. Add the cauliflower to the pot and cook over medium heat until it begins to soften, about 8 minutes.

  • While the cabbage is cooking, prepare the other ingredients. Add all the ingredients to the pot, bring to a boil and simmer for 15 minutes or until the cabbage is tender.

  • Discard the bay leaf, season with salt and pepper and serve.

Feel free to add additional spices such as red pepper flakes, basil, or a sprinkling of fresh parsley.
Cooked meats such as ham, sausage, or chicken can be added. If adding pasta, cook it on the side and pour into each bowl for serving.
