My hard-boiled eggs are always perfectly cooked—it's the cheap gadget I use

Despite nearly two decades of practice, there are many culinary tasks that still leave me feeling uncertain. I'm extra careful whenever I'm using my mandoline, I can't figure out how to cut the potatoes into even-sized pieces, and I'm always a little worried that I'll undercook my chicken or I will over cook a beautiful one. Cut of steak. But there's one thing I can cook with confidence every time: hard-boiled eggs.

My foolproof method is to turn to an egg timer. Specifically, I use Norpro Egg Perfect Egg Timer ($9.96), which I've owned for so long I'm not sure how old it is or where I bought it. It reliably informs me when my eggs are on the right track, whether I'm making jammy eggs for breakfast or hard-boiled eggs for egg salad.

All I have to do is add the egg timer to boil with the egg, and cook until the red face of the timer darkens to the line I'm looking for — soft, medium or tough It works whether the eggs are started at room temperature or in boiling water, the water remains at a boil or is brought down to the boil, with the amount of water in any pot size, and with the number of eggs. . (I boil anywhere from four to a dozen eggs at a time.)

Any of these variables can affect the cooking time, but they do not affect the accuracy of my egg timer. It really feels magical to me, because I don't understand how it works. I know the temperature of the egg timer is increasing with the eggs, but I don't know how or why. Whatever the magic, I'm grateful to this kitchen gadget for figuring out how to boil my eggs exactly how I want them.

There's only one way I can think of that using an egg timer could go wrong, and that's to forget it altogether. Since it doesn't have an alarm but only visual indicators, you'll need to check it as the eggs are close to done, otherwise you risk overcooking your eggs.

While I don't buy or get hung up on single-use gadgets, this egg timer turned out to be more than just a novelty. It takes up very little drawer space and has helped me achieve countless batches of perfectly cooked hard-boiled eggs. Its small claim on my kitchen real estate far outweighs my peace of mind when it comes to this infamous kitchen chore. Now, if someone could just invent a timer I could throw in the pan next to my steak, I'd be all set.
