Pizza Stuffed Peppers Recipe

Pizza is high on my list of favorite foods, and the classic pairing of pepperoni and melted cheese is my go-to. I turn to these pizza-stuffed peppers to add flavor to an easy weeknight meal. These soft bell pepper boats are piled high with ground beef, rice, and onions and topped with pepperoni and cheese. They are bursting with flavor and can be customized in a variety of ways to match your to-go pizza order.

To make them even more weeknight-friendly, you don't need to cook the chilies before filling. Also, you can assemble the peppers up to 24 hours ahead of time and refrigerate before baking.

Variation and flavor possibilities

Pizza equals creativity, and these stuffed peppers are no different. Try adding or substituting ingredients for other pizza toppings you like.

  • Make it higher: Swap the ground beef for cooked sausage, mushrooms and black olives.
  • Your favorite sauce: Just like making a pizza, you get to choose your go-to red sauce. You can go with store-bought pizza sauce or your favorite marinara (I like Trader Joe's Tomato Basil) or use homemade sauce.
  • Play with cheese: Mozzarella is a classic pizza for its flavor and melt. You can definitely make a cheddar-mozzarella blend for a little more kick. Want even more cheese? Mix an additional 1/2 cup of cheese into the filling before filling the peppers.
  • Replace the rice: Jasmine rice is my go-to and what I use for these pizza stuffed peppers. It can be easily substituted with any other type of rice. Want more protein? Use cooked quinoa.

These stuffed peppers make for a delicious meal. As a professional recipe developer, sometimes working all day in the kitchen, I'm not interested in putting together dinner. I'll often make the rice, cook the beef and onion mixture, and stuff the peppers together. That way I can put aluminum foil on a baking dish and pop it in the fridge until I'm ready to cook it.

I also like to use leftover cooked rice that I have on hand. You can also heat frozen rice to speed up the process.
